Part of the Sacrificio tier, this is a unique vegetarian offering that uses no protein during production. The agave is crushed by a bull-driven stone tahona, baked in earthen pits, fermented, and distilled. During the second distillation, pumpkin stems with seasonal fruit and grains — pineapple, plantain, orange, pumpkin seeds, and chepiche — are suspended in a basket inside the still.Tasting Notes
