El Jolgorio Jabalí Joven Mezcal is a wild-varietal artisanal mezcal from El Jolgorio — traditionally pit-roasted, mule-drawn tahona-crushed, open-fermented, double-distilled from 100% wild-harvested Agave Jabalí (Agave convallis) harvested at 16 years of age. Jabalí is one of the rarest and most challenging wild agaves to distill, with a distinctively wild, intense character.Agave convallis takes 16+ years to mature and is famously difficult to process because of its high natural saponin content, which causes the mash to foam violently during fermentation. Mezcaleros who work successfully with Jabalí are highly respected in the artisanal mezcal community. The wild varietal produces a mezcal of striking aromatic intensity and structural complexity distinct from every other Oaxacan agave.Specs
